The aromas of the 2007 Bothie immediately leap from the glass with fresh pine/lime and lychees slowly dissipating to reveal extraordinary floral notes of lavender and a hint of rosemary. The subtle, clean flavours of lemon sorbet, lemon tart and orange rind balance perfectly with the residual sugar creating a full, lush, round palate.

There are many ways to make a sweet wine and we have chosen to fashion The Bothie after the great sweet wines of the Mediterranean using a method called ‘mutage’, the adding of grape spirit to the must. Wine made using this method is referred to as ‘vin doux nature!’ and is famed for its heady fragrance and refreshing sweetness – a glass of this on its own is often a great replacement for dessert.
 
What the critics think
Pale gold. Crisp scents of peach, ripe pear and dried apricot. Plump and juicy on the palate, with a clean, brisk peach flavor that is in no way cloying. Impressive for its svelte, focused character (too much sweet muscat comes off as flabby!). Finishes with focus and pretty floral notes. This would be great with salty or blue cheeses. I like this style.90/100
