The aroma shows strong varietal Cabernet characters of red berry fruits, black olive, licorice, mint and menthol with hints of beetroot and rhubarb. The palate is wonderfully mouth filling, and very rich in primary fruit flavours of ripe red berries and black currants. Firm tannins provide great structure and well balanced acid ensures this wine will continue to improve with further cellaring (3-5 years).

WINEMAKER'S COMMENTS:
Overall we regard 2005 as a very good vintage. Good winter rains ensured adequate soil moisture for the summer ripening period ahead. This meant very healthy vines with good canopies. The summer turned out to be reasonably mild, which meant optimal ripeness temperatures brought the harvest forward by about two weeks. Red wines from 2005 vintage typically show very good varietal characters with well balanced tannins and acid.

What the critics think

2005- “A generous and juicy wine, the rich, dark chocolate-accented McLaren Vale component balanced by Coonawarra red and blackcurrant fruit, good line and mouthfeel.” Rating; 93 points
James Halliday- Australian Wine Companion - 2010

2005 –“In last year’s review of the 2004, we noted that McLaren Vale was better for Shiraz than Cabernet- with exceptions. Merrill is often one of those exceptions, though there seems to be a growing band of them in the region. The 2005, It reeks of Cabernet – in a good way. It’s dusty, briary, and full of curranty fruit flavour and, despite its sturdy frame of tannin, it maintains a sense of elegance. It’s also developing at a steady clip, though it will keep in bottle for a little longer. Vanillin oak plays a supporting role.” Drink 2010-2014, Rating 89
