The wine has been made from 100% Estate grown Shiraz fruit and aged for 15 months in new and one year old French oak. The warm early vintage combined with low yields has produced an excellent Paringa Shiraz.
The bouquet has Paringa Estate’s distinctive cracked black pepper/spice & plum characters. On the palate spicy blackberry and plum fruit flavours are supported by firm fine grained tannins that will soften with bottle development. A wine that can be enjoyed young with food, but will also reward careful cellaring.

2007- “The Mornington Peninsula’s fine-wine reputation rests largely on Pinot Noir & Chardonnay. During the early days as a serious wine region in the late 1970s and early ‘80s, the cool climate was deemed unsuitable for sun-loving shiraz. Some growers disagreed. Lindsay McCall of Paringa Estate was one and today his shiraz is justifiably famous. This powerful expression of the style is deeply coloured and aromatic, offering plum and loganberry-like fruit, with dabs of pepper, pungent herbs and floral notes. Oak is noticeable but not overdone. In the mouth, it’s all harmony: medium body, silky texture, intensity, no heaviness and a long, fresh finish.” Rating: 5 Star

2007 – “This mid-tier shiraz in the Paringa hierarchy is settling nicely into shape with ripe dark plum, and berry fruits, a gentle waft of pepper, smoked meats and mocha-scented, toasty oak. The palate has chewy, assertive tannins that cap plenty of rich dark berry/plum flavour, heading into toasted nuts and chocolate through the finish. Elegant and assertive, nicely balance and almost ready to drink. Rating; 94 points
