Hand grown, hand picked and hand made, Seresin wines have forged a reputation for individuality and complexity. Seresin embrace the principals of Bio-dynamics and traditional winemaking; hand-tending the organic vineyards and crafting wines in harmony with seasonal and celestial rhythms.
 
All the fruit for this wine comes from our oldest vines from the Seresin Home Vineyard on the upper terraces surrounding the winery. The vineyard is made up of a variety of Waimakiriri type soils of alluvial origin with free-draining basalt pebbles. The vines are all on narrow-row spacing which promotes competition and encourages a lighter crop on each vine.
 
Due to the varied ripening levels of the fruit the same Riesling vineyard was handpicked three times during the month of May to ensure that only the best fruit was selected. Berry selection was meticulous and only clean botrytised (noble rot) fruit was picked. This fruit was left for 24 hours in sealed containers to maximise skin contact and then the fruit was pressed over an eight-hour press cycle.
 
Fermentation proceeded slowly due to the high sugar content and was stopped by chilling a month later, after the wine had reached the desired alcohol level of 11%. The wine was then filtered and bottled immediately.
 
The nose exhibits aromas of honey, beeswax, and lime cordial. The palate is rich and luscious with concentrated tropical flavours and a well supported acidity. This wine will improve over the next ten years, and become richer and more honeyed as it ages.
