This wine was made from pinot noir from two cool climate sites. Coldstream in the Yarra Valley and Daylesford in the Macedon Ranges. Both meticulously cared for vineyards, the richness of the fruit from the Yarra Valley is complemented by the subtlety and superb natural acid from the Macedon Ranges fruit. With spiciness and some vegetative complexity on the nose; rich, dark red cherries on the palate, a great mouthfeel and lingering finish this is a terrific wine to complement light red meats or simply on its own, shared with friends. Upon arrival at the winery, part (approx 50%) was crushed and de-stemmed and part was whole bunch or whole berry fermented, there is always a component of stems in the mix. Cultured yeast into the must and fermentation commenced and lasted for 5-7 days, cooling was applied when temperatures reached 31°C. Malolactic fermentation occurred naturally as the mean ambient temperature reached about 17 degrees and when complete the wine was racked, egg white fined, cold stabilized, sulphur adjusted, coarse filtered and bottled. Barrels were top quality French oak 1-5 years old; barriques and hogsheads.
