The bouquet and palate of this wine displays citrus, peach and nectarine, along with the creamy and nutty characteristics introduced by barrel fermentation. The mouth feel is long and rich and finishes with good acidity.
The chardonnay winemaking process involved the fruit being crushed, destemmed and gently airbag pressed to obtain the highest quality free-run juice which was barrel fermented in new and one year old Vosges and Allier French Oak barriques. Approximately 15% of this wine has been wild yeast fermented and also underwent malolactic fermentation.
