The bouquet of this wine is fruit driven with citrus and stonefruit characteristics, nectarine and peach in particular. The palate has similar tropical and stonefruit flavours combined with subtle nutty barrel ferment characters and good acidity. This is a lovely fresh wine that will provide excellent current drinking but will reward 2 to 3 years cellaring. The fruit for this wine was sourced from our Thacore Vineyard in Callanans Road and Sea Vista Vineyard in Paringa Road. The winemaking process for this wine was almost identical to that of our premium Estate Chardonnay. The fruit was crashed and destemmed, gently airbag pressed and then 100% barrel fermented in seasoned French Oak barriques. Approximately 20% of this wine was wild yeast fermented.
