Seresin embrace the principals of Bio-dynamics and traditional winemaking; hand-tending the organic vineyards and crafting wines in harmony with seasonal and celestial rhythms. This wine is richly coloured and shows classic Pinot Noir characters on the nose. There are notes of spice, plums, red berries and leather. The palate reveals flavours of red raspberry fruits and smoky oak with soft fine-grained tannins and firm acidity to draw out the palate. This wine is made entirely from fruit from our Raupo Creek vineyard which is located on the foothills at the southern end of the Omaka Valley. The soil has very high clay content. After hand-harvesting, the fruit was sorted on our triage table prior to being de-stemmed and was taken to small open-top fermenters without crushing the berries. After five days of cool temperatures the must was allowed to warm and the fermentation to start naturally with the indigenous yeast. The vats were hand-plunged twice daily for the duration of fermentation which lasted about 6 days. Once fermentation was finished, the wine was left in contact with its skins for 2 weeks. This wine was aged for 16 months in French oak barriques before being bottled unfiltered and without fining.   What the critics think
